Cinnamon Quinoa Muffins Recipe

Sometimes being bad can also be good. Here at Restaurants of Leeds we want our lovely followers to be able to snack on some “cinnamony sweety goodness” without the guilt. Try the recipe for yourself and let us know what you think. 300g Quinoa

60g Coconut Oil, melted

2 tbsp Lemon Juice

3 whole Eggs

2 small Bananas, chiopped

1 tsp Bicarbonate of Soda

2 tsp Vanilla Extract

1 tbsp Cinnamon

4 tbsp Honey

8 tbsp ground Flaxseed

175g Raisins

50g Dates, chopped

Method

1. Soak quinoa in 700ml water & 1 tbsp of the lemon juice overnight. Drain, rinse, drain.
2. Preheat oven to 180c (160 fan), 350f, gas mark 4.
3. Line 12 hold muffin tray with paper cases or use silicon muffin tray. Brush moulds or cases with a little of the coconut oil.
4. Place all ingredients, except raisins, in food processor & blend until smooth. Stir in the raisins.
5. Divide the mix between the 12 cases/moulds & bake for 40-45 mins. Allow to cool before serving.
